A Week in the Life of Reversing Rheumatoid Arthritis — Without Medication

Last week was one of those beautifully chaotic ones — full of life, work, and a little bit of jetlag for good measure!
Between juggling my own health regime, coaching clients through theirs, and having some exciting conversations with publishers about my book (more on that soon!), I somehow managed to squeeze in an unplanned trip down to London. By the weekend, I was ready for something grounding — and that came in the form of one of my favourite rituals: Sunday lunch with the family.
Now that my children are grown, Sunday roasts look very different to when they were little. The chaos has turned into calm — still lively, but in that Friends-style way where everyone drifts in, grabs a plate, and we chat and laugh about life. I often take a quiet moment to appreciate how far we’ve come — not just as a family, but personally.
There was a time, 23 years ago, when I couldn’t have imagined this kind of normality. Living with rheumatoid arthritis — and choosing to heal naturally, without medication — has taught me that health is built in the everyday moments. The meals, the movement, the mindset, and the laughter around the table.
These days, I make sure every meal — even the family feasts — stays within my anti-inflammatory lifestyle. But that doesn’t mean missing out on treats. Dessert is always part of the plan… just made with better ingredients.
This week’s hit?Homemade Brownies made with Honey & Ground Almonds
They’re rich, gooey, and friendly for all blood types — keeping inflammation low while still feeling indulgent. And since my “healthy ice cream” decided not to defrost (ever!), I served them with thick Greek yogurt instead. It worked perfectly.

Honey & Almond Brownies Recipe
Ingredients:
100g 85% dark chocolate (to melt)
1 cup runny honey
1 teaspoon vanilla
2 large eggs
¼ cup cocoa powder
½ teaspoon salt
¼ teaspoon baking powder
⅓ cup almond flour
¾ cup 85% dark chocolate chips
Instructions:
Preheat oven to 160°C / 320°F and line a brownie tin with parchment paper.
In a bowl, whisk cocoa powder, almond flour, salt, and baking powder. Set aside.
Melt the dark chocolate and butter together, then stir in the honey, vanilla, and eggs.
Combine with the dry mix and fold in the chocolate chips.
Spread into the tin and bake for 30–40 minutes — until the centre has a slight jiggle.
Cool completely, then cut into squares and enjoy!
They were a big success — proof that eating anti-inflammatory doesn’t have to mean giving up flavour, joy, or the pleasure of sharing food.
It’s these small, delicious, nourishing moments that make long-term healing not just possible… but sustainable.
